Vegetarian Recipes: seitan strips with porcini mushrooms

Vegetarian main courses: a recipe with seitan, a high-protein alternative to meat

One of the best-known vegetarian foods is undoubtedly seitan, a product derived from wheat gluten or gluten from other cereals. Its extremely high protein content makes it a frequent ingredient in vegetarian main dishes, because it facilitates a healthily balanced diet without the need for animal protein. Our proposal here is seitan strips with porcini mushrooms, a light but tasty dish that might offer a door into the world of vegetarian cuisine for those who have never tried it, or a new idea for regular adepts! Let’s take a look!

Ingredients

  • 280 gr of natural seitan
  • 150 gr of fresh porcini mushrooms
  • 1 potato
  • 1 leek
  • 1 Fuji apple
  • 1 lemon
  • provencal herbs
  • salt
  • extra-virgin olive oil to taste
  • balsamic vinegar to taste
  • fresh ginger

Procedure

Wash and clean the potato, peel it and cut it into small pieces. Repeat this procedure on the white part of the leek, and put them with the potato in a saucepan. Add water and cook until they are tender. After cooking, let them cool and then add some ginger.

Now cut the seitan – plus the washed but unpeeled apple – into narrow strips. Fry these together lightly for 5 minutes with a little extra virgin olive oil, the lemon juice and a few drops of balsamic vinegar. Next, add the provencal herbs, a pinch of salt and the porcini mushrooms cut into strips.

Use an electric whisk to blend the leek and potato, until you obtain a homogeneous cream. Add a little salt and extra virgin olive oil, if desired. Serve with the strips of seitan and apple spread on top of the creamed leek and potato bed.
